Death on a Plate
Cooking is one of my favorite activities. It's relaxing and you get to eat the results. This evening, I made a recipe from a cookbook I helped create when I was a reporter. The recipe was from our governor (at the time a member of Congress), John Baldacci.
After seeing what's in this recipe, you'll be amazed that Maine's governor is as skinny as he is.
Pasta Carbonara
Cut 1/4 lb. bacon into little pieces and cook until clear in a cube (about a tablespoon or so) of butter.
Yes, that's right. Bacon cooked in butter.
Heat 1 cup milk in a small saucepan and add the bacon and butter. Add 2 Tablespoons wine vinegar. This will turn the milk to cheese. Simmer for about 15 minutes until the sauce cooks smooth.
Boil your favorite pasta. Drain and return to the pan. Immediately throw in two whipped eggs, the above sauce and 1/3 cup grated romano or parmesan cheese. Season with salt and pepper, toss and serve.
The end result is decadent, but goooood.

You just reminded me that I have not eaten all day. My belly is officially chewing on my backbone.

Onions! Spaghetti Carbonara must have onions. Any recipe for the sacred Carbonara without onions is heretical and must be crushed.
